All-Purpose Home-Style Gravy for Chicken, Beef, Fish, or Turkey
Preparation Time: 30 minutes
Yield: Approx. 3 cups
Ingredients:
1
small carrot
1 small onion
1 celery stalk
3 tablespoons olive oil
2 cups beef broth
2 cups chicken broth
1 small bay leaf (Secret Ingredient!)
¼ teaspoon Lawry’s seasoned salt
¼ teaspoon ground black pepper
¼ teaspoon thyme
½ cup white wine (Secret Ingredient!)
½ cup all-purpose white flour
Advance
Preparation…
1.
Chop
one small carrot, one small onion, and one stalk of celery into
¼ inch pieces.
2.
Next,
mince all of the above vegetables using a vegetable chopper.
Note: If
you don’t have a vegetable chopper, you can mix all the
vegetables together with the 2 cups of beef broth called for in
the recipe, and use a blender.
Let’s Cook!
1.
In
a small 10-inch saucepan, add 3 tablespoons olive oil and all
the minced vegetables (prepared earlier).
2.
Simmer
covered
on medium
heat for about 5 minutes, stirring occasionally, until all the
vegetables are tender.
3.
Carefully transfer the contents of the 10-inch saucepan to a 2-quart pot.
4.
Add
2 cups beef broth (if not already added earlier when blending
the vegetables), 2 cups chicken broth, 1 small bay leaf, ¼
teaspoon Lawry’s seasoned salt, ¼ teaspoon ground black
pepper, and ¼ teaspoon thyme. Bring to a boil then simmer on low heat for 10 minutes.
5.
In
a measuring cup, thoroughly mix ½ cup white wine with ½ cup all-purpose white
flour until all the lumps are gone.
SLOWLY
stir this mixture into the gravy, stirring while adding.
Note:
Some lumps may appear in the gravy and are unavoidable.
Don’t worry, the lumps will be removed later in the
straining step.
6.
Simmer
uncovered
on low
heat for an additional 10 minutes, stirring occasionally;
allowing the gravy to thicken, then turn off the stove.
7.
Remove
from heat and strain the gravy through a fine-mesh strainer to
remove the lumps and vegetable matter.
Note:
You can gently help the straining process along with a
wooden spoon until only the vegetable matter remains. Straining
will the help of a wooden spoon should take about 5 minutes.
8.
Transfer
the strained gravy into a serving dish or gravy bowl.
9.
When
ready to serve, warm the gravy in a microwave oven, and serve
hot.
Serving Suggestions:
Serve this all-purpose gravy with chicken, beef, fish, or
turkey. It also
goes exceptionally well with vegetables, potatoes, rice, pasta,
or served over breakfast sausage and biscuits.
