Beef Tenderloin Tips and Special Sauce served with Red Potatoes
and Green Beans
Preparation Time: 30 minutes
Serves: 4-6
Beef Tenderloin
Tips and Sauce:
2
lbs. extra-lean beef tenderloin tips
3 tablespoons olive oil
1 tablespoon minced garlic
¼ cup soy sauce
1 small onion, finely chopped
1 carrot cut into ½ inch pieces
1 stalk of celery cut into ½ inch pieces
¼ cup balsamic vinegar (Secret Ingredient!)
½ teaspoon rosemary
½ cup beef broth
1 bay leaf (Secret Ingredient!)
¼ teaspoon ground black pepper
1 teaspoon Kitchen Bouquet
1 tablespoon all-purpose white flour
½ cup white wine (Secret Ingredient!) |
Red Potatoes:
6
medium-size whole red potatoes cut into wedges
½ teaspoon thyme
½ cup beef broth
1 tablespoon parsley flakes
Green Beans:
1
lb. garden-fresh green beans
½ teaspoon basil
½ teaspoon minced garlic
1 teaspoon red wine vinegar (Secret Ingredient!)
1 cup water
2 tablespoons olive oil

Advance Preparation Before
you start to cook…
1.
Cut one carrot and one stalk of celery into ½ inch
pieces.
Set aside.
2.
Finely
chop one small onion. Set
aside.
3.
Wash
six medium-size red potatoes and cut into wedges (six wedges per
potato). Set aside.
Note: Do not peel the potatoes!
4.
Wash
1 lb. fresh green beans and trim the tips.
Set aside.
Let’s Cook!
First the Potatoes…
1.
Place the cut potatoes into a large 2-quart microwave
dish.
2.
In
a measuring cup, mix ½ teaspoon thyme with ½ cup beef broth
and pour evenly over the potatoes.
3.
Sprinkle
1 tablespoon of parsley flakes evenly over the potatoes.
4.
Cover
the dish and microwave on high for 15 minutes.
When done, set aside to cool.
Important!
Please note that microwave cooking times are approximate.
Depending on the power of your microwave oven, you may
need to adjust the recommended microwave cooking time a couple
of minutes either way. Just
be sure that your microwave vegetables are completely cooked (but not
overcooked) and ready to serve once they come out of the microwave oven.
Now for the Green
Beans…
1.
Place the green beans into a 1-quart microwave dish.
2.
In
a measuring cup, mix ½ teaspoon basil, ½ teaspoon minced
garlic, and 1 teaspoon red wine vinegar with 1 cup of water and
pour evenly over the green beans.
3.
Pour
2 tablespoons of olive oil evenly over the green beans.
4.
Cover
the dish and microwave on high for 8 minutes (when the potatoes
are done cooking). Stir
the beans when done then set aside to cool.
Next, Cook the
Tenderloin Tips…
1.
In a large 12-inch saucepan, heat 3 tablespoons olive oil
and 1 tablespoon minced garlic. Simmer
on low heat for 1 minute. Be
careful not to burn the garlic!
2.
Add
the tenderloin tips and ¼ cup soy sauce.
Cook on medium heat uncovered
until the tips are no longer pink (about 10 minutes), stirring
occasionally.
3.
Add
the chopped onion, carrot, and celery to the tips. Also add ¼ cup balsamic vinegar, ½ teaspoon rosemary, ½
cup beef stock, 1 bay leaf, ¼ teaspoon ground black pepper, and
1 teaspoon Kitchen Bouquet.
Stir well and simmer uncovered
on medium heat until the vegetables are tender (about 10
minutes). This will
also allow the sauce to thicken.
4.
In
a measuring cup, mix 1 tablespoon all-purpose white flour with
½ cup white wine. Mix
well until all the lumps are gone.
SLOWLY add this to
the tips, stirring while adding.
Simmer uncovered
on low heat for 5 minutes then turn off the stove and allow to
cool for a few minutes before serving.
Final Steps…
1.
Drain the liquid from the green beans and place them into
a serving dish (or you can use the microwave dish as your
serving dish).
2.
Drain
the liquid from the potatoes and place them into a serving dish
(or here again, you can use the microwave dish as your serving
dish).
3.
Place
the tenderloin tips and sauce into a separate serving dish, and
serve.
Serving Suggestion:
Pour the sauce over the potatoes and
the green beans when serving.
Also, add a sprig of fresh parsley to each plate for
color. Serve this
dish with a salad and a glass of the same white wine used to
prepare the sauce. And
although this dish does not require any additional salt or
pepper, all of our BestDinnerRecipes.com recipes are naturally
low in salt so your guests may wish to add additional salt and
pepper if desired to suit their individual preference.
Note:
As cooked beef naturally tends to be thick and chewy, you may
ask your butcher for a “tenderized” selection of beef
tenderloin tips. Alternatively,
you can extend the cooking time and cook on low heat for tips
that are softer and somewhat easier to chew.
